Going to the market

We buy most of our fresh fruits and vegetables at open-air markets. They are all over Apia. Locals from the planations come and sell what they've harvested that day. The fruits and vegetables are always fresh and in season. There are usually bananas, papayas, coconuts. pumpkins, bok choy, taro and cucumbers. At some times of the year you'll see mangos, watercress, sweet potatoes, eggplant, pineapple, avocados, breadfuit and tomatoes.

Two things you can always find at the market are cabbages and carrots. Hmmm...that sounds suspiciously like fixings for cole slaw.

To chopped cabbage and grated carrots we add a large dollop of mayo and about a tablespoon each of apple cider vinegar and raw sugar. The raw sugar here is brown with large crystals. It always comes in a repack bag.

We love  cole slaw and make it at least once or twice a week.

  1. Going to the market sounds like fun! It looks well-organized and friendly. Are the green and yellow melon-like things in the middle of the photo papayas? Your coleslaw looks fresh and yummy!

    1. Yes, those are papayas. The market in the picture is Tafusi market, one of the biggest in town. You can drive down the center and there are stalls on both sides. There are 2 roads like that, about a block long. We usually go to one of the markets a little closer to us that are smaller.
