Today 's soup was a repeat of Joe Cross's Raw Carrot Ginger Soup from his Reboot program. I made this several years ago without the optional coconut. We really loved the clean crisp flavors of the carrot and ginger. This time I added the coconut. The coconut was a little overwhelming and seemed to throw off the balance of the flavors. I will probably try this soup again some day, but definitely without the coconut.
Raw Carrot Ginger

3 cups carrot juice
1 ripe avocado
2 Tbsp raw agave or coconut sugar
1 Tbsp minced fresh ginger
1/8 tsp ground cayenne pepper or
more to taste
1/4 tsp Celtic sea salt or more to
taste
1/2 cup raw fresh coconut meat
(optional)
2 Tbsp cold pressed avocado or olive
oil (for garnish)
2 Tbsp chopped fresh cilantro (for
garnish)
Puree the carrot juice, avocado,coconut
meat, sweetener, ginger, cayenne pepper and salt in your Vitamix until completely smooth.
Taste and adjust the seasonings if
necessary. Garnish the soup with a drizzle of oil and the chopped cilantro.
