Last night we had tortilla soup for our Sunday family dinner. I combined elements of 2 different recipes to make my own version. It was a big hit. I took a quick picture of it before we served it, but once it got on the table it went so fast that I forgot to take a picture with all the garnishes.
Tonight we had Kale and Sweet Potato Soup. This has become a standard favorite.
serves 8
2 boneless, skinless chicken breasts
1-2 T. olive oil
2 tsp chili powder
1 tsp cumin
1 onion, diced
3 cloves garlic, diced
1 28-oz can diced tomatoes
2 14-oz cans chicken broth
1 can corn, drained
1 can black beans, drained
1 4-oz can chopped green chili peppers
5 corn tortillas, slice in 2-3 inch long strips
Garnishes:
Sour cream
Diced avocado
Sliced green onion
Salsa or Pico de Gallo
Grated cheese
Cilantro
Crushed tortilla chips
Sprinkle chicken breasts with part of the chili powder and cumin. Fry in 1 T. olive oil until just cooked through then remove from pan. Use 2 forks to shred chicken. Set aside.
Add remaining 1 T. of oil (if needed). Add onion and garlic and fry until soft. Stir in the tomatoes, broth, and any remaining chili powder and cumin. Bring to a boil and simmer for 10 minutes.
Add corn, beans, green chilies, and chicken. Simmer for another 3 to 5 minutes.
Ladle soup into bowl and top with desired garnishes.
Kale and Sweet Potato Soup

1 whole red onion, small
2 cups vegetable broth
1 whole sweet potato, diced
5 cups kale, chopped
2 tsp chili powder
1 tsp cumin
1 tsp garlic powder
¼ tsp red pepper flakes
1 tsp curry powder
1 tbsp yellow miso paste
¼ tsp cinnamon
Slice red onion into thin slices. Line a medium pot with 1/4 cup of water and cook onions over high heat until translucent, about 3 minutes. Add broth, yam, 3/4 cup water and bring to a boil. Once boiling, reduce to medium and cook until potatoes are almost fork tender, about 3 minutes. Immediately add kale and remaining ingredients and cook, stirring frequently, until kale is dark green and soft, about 3 more minutes. Set aside for 5-10 minutes, allowing flavors to merge.
The tortilla soup was great! I still need to try the kale soup...
