Samoa

Mark and I will be traveling to Samoa in April to volunteer at the dental clinic by the LDS temple in Apia. We will be gone 6 months. I decided to look at Samoan recipes on the internet today to see if I could find some healthy options. I found a recipe for Sweet Potatoes in a Creamy Coconut Sauce and knew I had the perfect match. I had some sweet potatoes that needed to be used and the recipe looked simple. We paired it with brown rice and a green salad.

















Sweet Potato in Creamy Coconut Sauce

Ingredients
2 large sweet potatoes (can also use taro, cassava, or regular potatoes)
1 onion, diced finely
2-3 cloves garlic, crushed
1 can coconut milk
½  cup vegetable stock

Directions:
1.      Peel and cube the sweet potato and place in a large saucepan.
2.     Add the onion, garlic, coconut milk, vegetable stock. Bring to a boil, reduce heat to a simmer  and cover with a lid
3.      Simmer approximately 10 minutes. Remove lid and continue to cook until the sweet potatoes are cooked through. Stir gently every now and then to ensure even cooking.
