Sweet Potato in Creamy Coconut Sauce
Ingredients
2 large
sweet potatoes (can also use taro, cassava, or regular potatoes)
1 onion,
diced finely
2-3 cloves
garlic, crushed
1 can
coconut milk
½ cup vegetable stock
Directions:
1. Peel and cube the sweet potato and place in a
large saucepan.
2. Add the onion, garlic, coconut milk, vegetable
stock. Bring to a boil, reduce heat to a simmer and cover with a lid
3. Simmer approximately 10 minutes. Remove lid and
continue to cook until the sweet potatoes are cooked through. Stir gently every
now and then to ensure even cooking.
