Giving Anti-Cancer Soup a Second Chance

Breakfast was a purple power smoothie. Lunch was leftover Creamy Cruciferous Curry. (Unfortunately, yesterday's rating still stands)

For dinner we had Dr. Fuhrman's Famous Anti-Cancer Soup. We made this soup a couple of years ago. The only thing it's famous for at our house is for making mass quantities of soup we didn't like and eventually had to throw away. sigh.

This time I cut the recipe in fourths and made a few adjustments. I used lentils, zucchini, mushrooms, a bunch of green onions, baby kale, low sodium broth, and fresh carrot, celery and cilantro juice. I simmered this covered for half an hour, blended it in the Vitamix with raw cashews, returned it to the pot, and simmered another half hour.

Amazingly I liked it. Who'd have thunk it.  Mark liked it well enough, but said he would only give it a higher rating if it had a little ham and some chunks of veggies floating in it.
