Dinner tonight was Stuffed Peppers with Quinoa, Eggplant and Basil. We ate it with sliced fresh pineapple and mango.
Mark loves stuffed peppers and was very excited about this recipe. His main comment after he tried it was that they were too bland. He said that the thing that makes stuffed peppers so tasty is the meat. He would like it much better if there was a way to give it more of a burst of flavor.
I liked them, but I liked the filling better plain than with the pepper. It was actually pretty tasty.
I read one comment on Dr. Fuhrman's site that used marinara sauce rather than tomato sauce and then topped it with daiya mozzarella and smoked mild Spanish paprika before baking. That might give Mark more of a flavor burst.
