Naturally Leavened Blueberry Muffins


Yesterday I fed my natural leavening so we could have waffle for Waffle Saturday today. Then Mark found out he needed to participate in the Boy Scout woodcut at Timberline Lodge very early this morning. Mark was excited to get to use his chain saw, but sigh, no Waffle Saturday.

As I was baking a batch okara cookies this morning I noticed that the leavening had reached its peak. I quickly stirred together some Quick Sourdough Blueberry Muffins. They were ready to put in the oven when the okara cookies came out. Twenty minutes later...Delicioso! (My secret to making these especially tasty is exchanging melted extra-virgin coconut oil for the oil). 

Sorry no more pictures. They were so spur of the moment and went together so fast that I didn't think of pictures until they were already baked (and most of them were already eaten!)
