Starting to Eat for Health

Summer has been following Dr. Fuhrman's Eat to Live eating plan for nearly six weeks now. I've been working up to starting the progam for the same six weeks. Now I'm ready to commit. My main focus is increased fruits & veggies and no dairy or added sugars.


Over the weekend I made a modified version of Dr. Fuhrman's Sweet Potato Stew from Eat for Health. I followed the recipe, but added a full can of garbanzo beans rather than 1/2 cup, and also added sliced baby bella mushrooms. A great start for my first meal on the program (and also for several meals after). 


That night I took my natural leavening start out of the fridge and added 1 cup water and 1 1/2 cups freshly ground whole wheat. My start was whatever was clinging to the inside of the quart mason jar after I used it the last time. 



This is what the natural leavening looked like the next morning. I dumped it in a glass bowl and added:
1/2 t. salt
1/2 t. soda
1 egg
2 T. honey
2 T. oil
almond milk to thin to desired consistency

I mixed this together and cooked on a waffle iron.


I forgot to take a picture right after the waffles were done. Even though they were totally whole wheat, they were light and nummy crispy when they were first off the grill. I put a little natural peanut butter on my waffle and had it with a large green smoothie. This picture was taken about an hour later. The waffles look a little droopy, but were still tasty to snack on.
