Spaghetti Squash and Spumoni

Saturday we went to OMSI with Summer, Matt and the grandkids. It was perfect because Mark and I ate some of the leftovers that have been building up and didn't have to take time to prepare meals. We ate more leftovers for lunch on Sunday.

Sunday night was family dinner night. We fixed Spaghetti Squash Primavera because this is a dish we've tried before and liked. We'd had such a fuss with the grandkids about Dr. Fuhrman last week that I fixed a salad and garlic bread on the side and spumoni ice cream and okara cookies for dessert.

Elsie and Elijah did not want to try the spaghetti squash until they were told they would not be able to try the spumoni ice cream if they didn't at least take a few bites. When they did, they liked it and finished the whole serving.The grandkids all really liked it and most asked for seconds or thirds.

I also forgot to take a picture last night. This morning I remembered I had a small dish of the dregs in the fridge. It doesn't show the spaghetti squash very well. The one change I made to the recipe was that when it called for 1 cup of marinara sauce I said, "What the hey", and dumped in the whole bottle.
