Pasta Night


Tonight we had Baked Vegan Ziti for dinner (I substituted a 13.25 oz. box of Barilla whole wheat penne pasta and whole wheat bread crumbs). It was yummy. We were in such a hurry to eat that I forgot to take a picture until we had already started scooping it onto our plates. Oops.

I had mine with a salad of torn green leaf lettuce and vidalia onion vinaigrette with a large side of steamed broccoli and cauliflower.

  2. the cashew ricotta was great. I think I'll double it next time like was suggested in the recipe.
